A hidden gem in the Var
At the heart of the Hôtel du Parc estate, Restaurant Le Parc has reinvented itself for the 2026 season with the arrival of Chef Daniel Do Vale, a recognised name in French gastronomy, who previously helmed both the brasserie L'Authentic and the gastronomic restaurant Le Chalet at Le Mont Vallon, a four-star hotel in Méribel-Mottaret.
At Cavalaire, Daniel Do Vale brings a Southern kitchen, simple, sincere and generous. Made entirely in-house, built around rigorously sourced fresh produce, it celebrates the treasures of the Mediterranean and the Provençal terroir without artifice or unnecessary complexity. A table where the food is the point, in a setting that rewards those who seek it out, far from the coast's more obvious addresses.

Lunch by the pool
Sun loungers, blue water, and a menu worth lingering over. The Pool House serves a fully homemade lunch menu each midday, rooted in Mediterranean flavours: burrata from Puglia, heirloom tomatoes with basil pine nut vinaigrette, sea bream pan-seared on the skin, Rummo pasta with pesto and taggiasca olives. Sharing boards, Italian charcuterie, a selection of aged cheeses, for those who prefer to graze between swims. A children's menu is also available for under 11s.
Everything is made on site, from fresh produce. A way to eat properly without leaving the water's edge.
Fresh picnic baskets are also available on request at reception for walks along the Var coastline.

The large terrace of Restaurant Le Parc, set above the park canopy, opens onto sea and garden views that shift with the hour, golden at dusk, deep blue as the evening settles, starred long after dessert. A sheltered setting, away from the summer crowds, that Cavalaire locals have long kept to themselves. The evening unfolds at its own pace: a drink at the bar open to the terrace in the last of the light, then the table taking over, land and sea on the plate, fish from the coast, vegetables from the market, herbs from the South, with a few Mediterranean touches from further afield. Wines from Provençal estates, white, rosé and red, complete the table, chosen for their grounding in the Var terroir.

Restaurant Le Parc is available for private events: drinks reception by the pool, dinner under the stars on the terrace, an evening with dancing, a family barbecue. Up to 60 guests, with the option to extend into the park for larger gatherings. Private lunch available from 12 guests. Full hotel buyout possible.
The team supports each project from end to end, cuisine, decoration and coordination with local partners. for bespoke events tailored to every occasion.
